金沙江长鳍吻鮈的含肉率及其营养成分分析

      试验测定了长鳍吻鮈(Rhinogobio ventralis)含肉率及其肌肉常规营养成分(蛋白质、脂肪、灰分、水分)、矿物元素(钙、磷、钠、镁、铜、锌、铁、锰、铬、硒)和氨基酸组成,并对其营养价值作了综合评定。结果表明,长鳍吻鮈含肉率为(69.51±4.91)%;肌肉(鲜样)中水分、粗蛋白、粗脂肪和灰分的含量分别为(70.14±0.72)%、(17.26±0.47)%、(11.28±0.64)%、(0.87±0.03)%;肌肉中17种常见氨基酸(除色氨酸外)总含量为(16.15±0.26)%;其中,必需氨基酸含量为(6.31±0.11)%,占氨基酸总含量的39.10%。必需氨基酸与非必需氨基酸含量的比值为64.20%。鲜味氨基酸含量为(6.27±0.11)%,占氨基酸总含量的38.83%。必需氨基酸指数为82.17。长鳍吻鮈的限制性氨基酸主要是异亮氨酸、蛋氨酸+胱氨酸、缬氨酸。10种矿物元素中,钙、磷、钠、镁4种常量元素的平均含量在296.32~3278.14μg/g,而铜、锌、铁、锰、铬、硒6种微量元素含量的平均值则在0.06~112.5μg/g;平均钙磷比为1∶2.1。

      A analysis of the ratio of flesh content and the contents of the main nutrients(such as protein,fat,ash , content , moisture ) were analyzed,mineral elements,amino acids composition in its muscle were done for Rhinogobio ventralis. Morover, its nutritional value was evaluated and compared with other fishes. The ratio of flesh content of R. ventralis was ( 69.51±4.91)%. And the proportion of moisture,crude protein ,crude fat and ash content is (70.14±0.72)%, (17.26±0.47)%, (11.28±0.64)%, and (0.87±0.03)%. In wet winter , the total content of 17 amino acids was found (16.15±0.26)%, including (6.31±0.11)% essential amino acids . 39.10% in total amino acids , and (6.27±0.11)%.4 delicious amino acids account for 38.83% in total amino amino acids. Essential amino acids to no- essential amino acids were 64.20% .The constitutional rate of the essential amino acids accords with the FAO/WHO standards basically . The essential amino acids index was 82. 17. According o the amino acids score(AAS ), the first limited amino acids was isoleucine and the second limited amino acids was valine; on the basis of chemical score( CS), the first limited amino acid was methionine + cystine and the second limited amino acids was isoleucine. 10 mineral elements were determined in the muscle. The range of average contents of microelements including Ca , P, Na and Mg was 296.32-3278.14μg/g and that of microelements including Cu, Zn , Fe Mn , Cr and Se was 0.06-112.5μg/g. Ca: P averaged 1:2.1.
