对丝尾鳠(Mystuswyckioides)肌肉的营养成分进行了测定,并对其营养价值作出评价。结果显示,丝尾!含肉率为68.39%,肌肉中水分含量为78.92%,粗蛋白含量17.85%,粗脂肪含量0.80%,灰分含量2.43%;肌肉中水解氨基酸总量为13.00%,含量最高为缬氨酸(Val),占1.24%,最低为胱氨酸(Cys),占0.41%;必需氨基酸含量为5.80%,占氨基酸总量的44.62%。依据1985年FAO/WHO推荐的蛋白质模式为评价标准,计算得出学龄前儿童、学龄儿童和成人3种不同人群水平的氨基酸价(AAS)分别为176.26、255.69和513.82;第一和第二限制氨基酸都是亮氨酸(Leu)和赖氨酸(Lys)。研究表明,丝尾!是一种高蛋白质、低脂肪、有开发前景的珍稀和优质鱼类。

Nutritional components in the muscle of Mystus wyckioides were measured and analyzed. The results showed,The ratio of flesh in the body was 68. 39%,and the average contents of moisture,crude protein,crude fat and minerals in the muscle were 78. 92%,17. 85%,0. 80 % and 2. 43 %,respectively. The amount of hydrolytic amino acids in the total amino acids of the muscle was 13 .00 %,,with the highest for Val(1 .24 %)and the lowest for Gly ( 0. 41%).The content of essential amino acids was 5.80%,equal 44.62% of the total amino acids. According to FAO/WHO recommended standards for the evaluation of protein patterns in 1985,three different levels of pre-school children,school-age children and adult populations in amino acid score(AAS ),calculated and reached 176.26,255.69 and 513.82 respectively,The first and second restrict amino acids are Leu ( a-aminoiso-caproic acid) and Lys. In conclusion,Mystus wyckioides is a fish of the high protein and low fat to be developing.
