| 对禾花鲤（Ｐｒｏｃｙｐｒｉｓｍｅｒｕｓ）的含肉率和肌肉营养成分进行了测定。结果表明，禾花鲤的含肉率为５６．５７％，肌肉中蛋白质的含量为１８．０６％，水分７４．６９％，灰分１．２０％，脂肪３．２５％；肌肉中氨基酸总量为７３．６６％，人体必需氨基酸总量为３３．５４％，必需氨基酸占总氨基酸的４５．５４％，必需氨基酸的构成基本符合ＷＨＯ／ＦＡＯ的标准，其中苏氨基酸为第一限制性氨基酸，４种鲜味氨基酸的含量较高，为２７．６９％。禾花鲤是一种营养价值较高，宜推广养殖和加工利用的鱼类品种。

| Flesh rate and the muscle nutrition component have been determined in Procypris merus. The results showed： the flesh rate of Rubrofuscus is 56.57%, muscle protein content is 18.06%, rude moisture content is 74. 69% , crude ash content is 1.20% ,crude fat is 3.25%. Muscle contains amino acids of 73.66% , the total amount of essential amino acids is 33.54%, in which the total essential amino acids is 33.54% , accounting for 45.54% of the total amino acids ; the basic compositions of essential amino acid accord with the WHO/FAO standards, in which the Threonine Thr is the first limiting amino acid, Four kinds of flavor amino acids with a high level is 27.69%. Rubrofuscus is a kind of fish specie with the higher nutritional value, which is advised to promote farming and processing and utilization. |
