| 利用常规肌肉营养分析方法测定了叶尔羌高原鳅的肌肉营养成分。结果表明:叶尔羌高原鳅肌肉中(鲜重)蛋白质含量为24.87%；脂肪含量为3.61%；水分含量为70.12%；粗灰分含量为1.40%。叶尔羌高原鳅肌肉(干重)总能值为26760J/g。叶尔羌高原鳅肌肉中(鲜重)矿物元素含量为：钙5466.7 mg/kg；磷1083.2mg/kg；钾592.3mg/kg；铁6.0mg/kg；锰0.78mg/kg；锌0.66mg/kg；铜0.12mg/kg。叶尔羌高原鳅肌肉中含有常见的17种氨基酸,其中包括9种人体必需氨基酸;氨基酸总量(占鲜重)为22.65%；必需氨基酸总量为11.04%；必需氨基酸的构成比例符合FAO/WHO的标准。鲜味氨基酸含量为3.66%。叶尔羌高原鳅的营养价值高于一般鱼类，适于作名贵鱼类养殖。 |

| Nutritional composition in muscle of Hedinichthys yarkandemis was determined by using conventional method. Results showed that the rate of protein in muscle of Hedinichthys yarkandemis was 24. 87% (greenweight );while the fat was 3. 61% ; Humidity in muscle of Hedinichthys yarkandemis was 70. 12%; while the cude ash was 1 .40 %.The general energy was 26 760 J/g( dry weight) in muscle of Hedinichthys yarkandemis. The rate of mineral element in muscle of Hedinichthys yarkandemis was;the content of calcium was 5 466. 7 mg/kg，the contentof phosphonium was 1 083 .2 mg/kg，the content of potassium was 592. 3 mg/kg，the content of ferrum was 6. 0mg/kg，the content of manganum was 0. 78 mg/kg，the content of zincum was 0. 66 mg/kg，the content of cuprumwas 0. 12 mg/kg. 17 common amino acids and 8 essential amino acids were found in muscle of Hedinichthys yarkandemis. The total content of amino acids was 22. 65 %(green weight);the content of essential amino acids content was 11 .04 %;which accord with the standard of FAO/WHO. The content of delicious amino acids was 3.66%. They are higher than other rare fresh water fishes. So Hedinichthys yarkandemis would be cultured as a rare fish. |
