采用Folin法测定2种水产饲料用商品蛋白酶的活性,研究了pH、温度以及热处理对其活性的影响。结果表明:实验酸性蛋白酶和中性蛋白酶的最适反应pH分别为3.0和7.0,最适反应温度均为60%,酸性蛋白酶的热稳定性优于中性蛋白酶。 |

The research determined enzyme activities of two proteases by Folin method, and studied the effects of pH, temperature and heat treatment on the enzyme activities. The results showed that the optimal pH of acid protease and neutral protease were 3.0 and 7.0, respectively. And their optimal temperature was about 60℃. The acid protease had higher thermal stability than neutral protease. |
